At Home Egg McMuffin

You know that scene in Big Daddy where Adam Sandler & the kid get so excited for McDonald’s breakfast not ending until 11:00 & they are crushed to find it ends at 10:30? That’s how I always feel about missing McDonald’s Egg McMuffins because I never think about it unless it past 10:30 or I’m already running late to work. I pretty much steer clear of fast food but I am a sucker for the fries & the egg mcmuffins at good ol’ Mickey D’s. So the other day I was driving & I saw a really clever billboard for the egg mcmuffin turning 40, & for 40 days it was only going to be $1.40. Loving the marketing aside (there were 40 candles all lit up, & one goes out every day as the countdown), I thought $1.40 was incentive enough to get up just a little bit earlier & grab one on my way to work. But then I started thinking how much yummier (& less shitty for me) it would be if I just made it myself. Plus I could use whatever cheese I wanted, not yucky American cheese. It wasn’t too hard to twist my own arm.

So I present to you the Egg McMuffin — at home. The best thing about it is you can have it at whatever time of day with whatever cheese you want. You can do bacon or sausage instead, or add a tomato, all of the above, or even put it on a bagel. I’m not even goona pretend I haven’t done it all. Another great thing about these is you can make a bunch ahead so you can just reheat late. You can find a great post about doing this, plus some nutritional info, hereĀ at the yummy life.

What You Need:

  • English Muffins
  • Canadian Bacon
  • Eggs
  • Cheese of your choice
  • Salt & Pepper

What You Do:

  • Fry or scramble one egg on small skillet on med-high heat
  • Cook canadian bacon in a small skillet on med-high heat
  • Toast english muffin (we used a George Foreman grill)
  • Place egg, bacon, and cheese on muffin. ENJOY!
