Breakfast Bruschetta

You know how when you’re looking at just one thing online & that “other things you may be interested in” thing catches your eye & before you know it, you’ve wasted more time than you care to admit reading & watching stuff that you never meant to? I know you know what I’m talking about.

Well I may or may not have been watching My Drunk Kitchen when I started clicking on random video suggestions & somehow ended up on Ramsey’s perfect scrambled eggs & I knew I had to try it. It was a totally different egg style than I’ve ever had & I mean it was labeled “perfect.” Of course I had to test it to see if it lived up to the claim. I didn’t have any crème fraîche on hand so I used cream cheese instead & oh me oh my was it incredible. I’m pretty sure I’ve made this like six times in the last couple weeks.

Ingredients

  • 3 eggs
  • 1/2 tlbs of unsalted butter
  • 1/2 tlbs of cream cheese
  • 2 tbs of chopped chives
  • Salt & Pepper
  • Baguette, cut into 3/4″ thick pieces & toasted
  • Olive oil
  • Cherry or grape tomatoes
Directions
Scrambled Eggs
  • Crack the three eggs into a small sauce pan & add butter.
  • Turn on stove to medium high heat & start to stir. Make sure you never stop stirring.
  • When eggs start to cook take the pan off the heat & continue to stir for a few seconds. Do this off & on about 4-5 times until your eggs are almost fully cooked.
  • When your eggs are almost cooked mix in the cream cheese, salt & pepper & chives.
  • Serve on baguette.
Tomatoes
  • Add a little oil to a pan and add as many tomatoes as you want.
  • Let the tomatoes cook for about 4-5 min
  • Serve and enjoy!

There are so many things happening recently in our world that when I hear about it, I am weakened & broken hearted. Given a handful of recent events, I find myself outraged by supposed choices made in the name of justice, & saddened by actions of our fellow humanity. Caught in a whirlwind of natural disasters, unending bullets, hate, & defenses, so many of us are wondering how we can make a change. The first step is always to increase your awareness & knowledge. Today I stumbled upon the issue of injustice in the U.S tomato fields & immediately aligned myself. Savory Simple has already put it perfectly (along with a great recipe),  & I invite you to join the change. You can purchase slave-free tomatoes at Whole Foods, Trader Joe’s, your local Farmer’s Market, or your CSA box. You can also send a 30 second letter here. Stand up for tomatoes, for yourselves, & for your world.

Fried Pickle Awesomeness

Fried Pickle Awesomeness

Serves 8-12 people

What You Need:
5c canola oil
1 32oz jar of dill pickle spears
10-15 slices of havarti cheese (depends how many pickle spears are on your jar)
1 package of egg roll wrappers
1/2c ranch
2 1/2 tbsp sriracha (more or less depending on how you like spicy)
1 tbsp water
1 egg

What You Do:
Heat up the oil in a pan til it gets to about 360°. Mix up the water & egg in a bowl, this becomes your egg wash for the egg roll wrappers. Place a slice of cheese on top of an egg roll wrapper, lay a pickle spear at an angle. Fold one corner towards the opposite corner, fold in the other two corners & roll up using the egg wash as a seal. Repeat for all the pickle spears. Place them carefully with tongs into oil & remove when fried. While they are cooling, mix together sriracha & ranch. Cut the rolls in half & enjoy.

Jalapeño Popper Dip

Jalapeño Popper Dip
Serves 8-10 people

What You Need:
16 oz cream cheese — softened
1/2 package of bacon (cook the rest for dipping though)
5 jalapeños
1/4 chopped cilantro
1/2 tbsp olive oil
1/4 tsp salt & pepper (or to taste)
1 tsp garlic
juice of 1 large lime

What You Do:
Preheat oven to 400°. Lay bacon out on a rack & cook for twenty minutes. Coat the jalapeños in olive oil & bake for fifteen minutes, rotating once or twice. You’re looking for a nice “char” on them. Meanwhile chop up your cilantro & garlic & combine it with the salt+pepper & cream cheese along with the juice of one large lime. Mix it thoroughly, a hand mixer works great. When the bacon is done, chop it up & add it to the mixture. When the jalapeños are done, cut the ends of & scrape out the seeds, chop them up, & combine. Serve with your favorite dipping tool.

 You can really control the amount here. I used two tomatoes & two mozzarella balls for each skewer. So for however many you want to make, just double that. Sorry to be so vague on this one :/

What You Need:

For Balsamic Reduction:
4 tbsp balsamic vinegar
1 1/2 tsp brown sugar

For Skewers:
1 package of skewers (I ended up cutting mine to get a manageable size)
1 (or more depending on how many you are making) package of grape tomatoes
1 (or more depending on how many you are making) package of tiny mozzarella balls. If you can only find it whole, just cut it up into a similar size
1 (or more) package of basil

What You Do:
Heat up a sauté pan. When hot, pour the balsamic in & then whisk in the brown sugar. Let it reduce for a few minutes then remove from heat & let cool.
Alternate the tomatoes & the mozzarella on skewers. Sprinkle chopped basil on top. Drizzle with balsamic.
